Preparing Using Fresh SunGlo-Idaho® Potatoes

For best results, use US grade #1 fresh SunGlo-Idaho® Potatoes, 60 to 160 count, packed in 50 lb. cartons or bags. For more information on box and potato sizes, click here.

- Commercially Unpeeled
- Store in dark, cool area preferably at 45° F. - DO NOT REFRIGERATE! - Remove carton lid for proper circulation.

- Unpeeled potatoes may be peeled before cooking or cooked with skins on, then rinsed under cool water and peeled. - Commercially pre-peeled potatoes must be rinsed before cooking.

Directions:
- Cook potatoes until fork tender.
- Heat milk until scalding.
- Drain potatoed, peel if necessary. Place in mixer.
- Pour heated milk into mixer with potatoes. Whip on "low" setting until smooth, 1-2 minutes.
- Add margarine or butter and salt. Whip on "high" setting for 3-4 minutes.
Note: More milk and a longer whipping time increase the volume of mashed potatoes. therefore, a #8 scoop (1/2 cup) can hold between 4.5 and 6.5 ounces.

- Pre-heat steamtable (moist heat) or warming cabinet. - Use deep halp steam table pan (13.5" x 10.5" x 6") deep. Keep covered with lid or plastic wrap. - If dry heat is used, set pan in water bath.

Note: Mashed potatoes made from frozen product can be held longer, up to 4 hours, on a steam table. Ask the manufacturer for specific product holding times.
